- Cook the quinoa. Combine the rinsed quinoa and broth or water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until all liquid is absorbed. Fluff with a fork and let it cool slightly.
- Prepare the dressing. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until combined.
- Combine the salad ingredients. In a large mixing bowl, combine the cooled quinoa, diced cucumber, halved cherry tomatoes, chopped red onion, and fresh parsley.
- Dress and serve. Pour the dressing over the quinoa mixture. Toss gently to coat all ingredients evenly. Serve immediately or chill before serving.
