Lasagna Soup with Cheesy Topping

This recipe makes a comforting lasagna soup topped with a blend of four cheeses. It is quick to prepare and cooks in about 30 minutes.

Ingredients
  

For the Soup
  • 2 pounds ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tsp Italian Seasoning
  • 1 Salt and Pepper to taste
  • 1 jar marinara sauce
  • 4 cups beef broth
  • 2 cups dried pasta such as broken lasagna noodles
For the Cheesy Topping
  • 1/2 cup ricotta cheese
  • 1/2 cup cottage cheese
  • 1/2 cup parmesan cheese plus extra for topping
  • 1/2 cup mozzarella cheese

  • Separate bowl

Method
 

  1. Chop the onion and add it to a large pot with the ground beef. Cook until the beef is browned.
  2. Drain the grease from the pot and return the beef to the pot.
  3. Add the garlic, Italian Seasoning, salt, pepper, marinara sauce, and beef broth. Mix everything and bring the mixture to a simmer.
  4. Add the dry pasta to the simmering soup. Reduce the heat to low and let it simmer for about 20 minutes, or until the noodles are cooked through.
  5. While the soup cooks, prepare the cheese mixture. In a separate bowl, combine the ricotta cheese, cottage cheese, parmesan cheese, and mozzarella cheese. Mix until the cheeses are combined.
  6. Serve the soup by ladling it into bowls. Top each serving with a scoop of the cheese mixture and a sprinkle of extra parmesan cheese.
