- Chop the onion and add it to a large pot with the ground beef. Cook until the beef is browned.
- Drain the grease from the pot and return the beef to the pot.
- Add the garlic, Italian Seasoning, salt, pepper, marinara sauce, and beef broth. Mix everything and bring the mixture to a simmer.
- Add the dry pasta to the simmering soup. Reduce the heat to low and let it simmer for about 20 minutes, or until the noodles are cooked through.
- While the soup cooks, prepare the cheese mixture. In a separate bowl, combine the ricotta cheese, cottage cheese, parmesan cheese, and mozzarella cheese. Mix until the cheeses are combined.
- Serve the soup by ladling it into bowls. Top each serving with a scoop of the cheese mixture and a sprinkle of extra parmesan cheese.
