Ingredients
  

Chicken and Seasoning
  • 4 Bone-in, skin-on chicken thighs About 6-8 ounces each
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Paprika
  • 1/2 tsp Garlic powder

  • Oven-safe skillet
  • Tongs

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Pat the chicken thighs completely dry using paper towels. This step helps achieve crispy skin.
  3. In a small bowl, mix together the salt, pepper, paprika, and garlic powder.
  4. Rub the olive oil over the chicken thighs. Then, sprinkle the seasoning mix evenly over all sides of the chicken.
  5. Place the oven-safe skillet over medium-high heat on the stovetop. Place the chicken thighs skin-side down in the hot, dry skillet.
  6. Sear the chicken thighs for 5 to 7 minutes without moving them until the skin is golden brown and crisp.
  7. Flip the chicken thighs so they are skin-side up. Transfer the skillet to the preheated oven.
  8. Roast for 20 to 25 minutes, or until an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius) is reached in the thickest part of the thigh.
  9. Remove the skillet from the oven. Let the chicken rest in the pan for 5 minutes before serving.

Notes

For extra flavor, you can add fresh herbs like thyme or rosemary to the skillet during the roasting phase.
