Method
- Whisk the eggs and milk together in a bowl. Add salt and pepper.
- Heat the olive oil in a skillet over medium heat.
- Add the spinach to the skillet and cook until wilted, about 2 minutes.
- Pour the egg mixture over the spinach. Let the eggs set slightly around the edges, about 1 minute.
- Gently push the cooked egg from the edges toward the center, tilting the pan so the uncooked egg flows underneath.
- When the eggs are mostly set but still slightly moist, sprinkle the feta cheese over the top. Cook for another minute until done to your liking.
- Serve immediately.

Notes
For extra protein, you can add 2 tablespoons of cottage cheese to the egg mixture before scrambling.
