Method
- Line a baking sheet with parchment paper. Set aside.
- Place the dark chocolate chips and coconut oil (if using) in a microwave-safe bowl.
- Microwave the chocolate in 30-second intervals, stirring well after each interval, until the chocolate is smooth and fully melted. Do not overheat.
- Hold each strawberry by the stem end. Dip the strawberry into the melted chocolate, rotating it to coat about two-thirds of the fruit.
- Lift the strawberry out and let any excess chocolate drip back into the bowl.
- Place the dipped strawberries onto the prepared parchment-lined baking sheet.
- Refrigerate the strawberries for about 15 minutes, or until the chocolate coating is firm.

For a decorative finish, you can drizzle a contrasting color of melted white chocolate over the set dark chocolate before chilling.
