Healthy Chocolate Mug Cake

This recipe makes a single-serving chocolate mug cake that is quick to prepare and uses whole-food ingredients.

Ingredients
  

Dry Ingredients
  • 2 tbsp Whole wheat pastry flour or oat flour Do not use regular all-purpose flour
  • 1 tbsp Unsweetened cocoa powder
  • 1 tsp Maple syrup or honey
  • 1/4 tsp Baking powder
  • Pinch Salt
Wet Ingredients
  • 3 tbsp Milk (dairy or non-dairy)
  • 1 tbsp Melted coconut oil or neutral oil
  • 1/2 tsp Vanilla extract
  • 1 Egg white Or 1 tbsp of applesauce for vegan option
  • 1 tbsp Chocolate chips (optional) Use dark chocolate for less sugar

Equipment

  • Microwave-safe mug (about 10-12 oz)
  • Small whisk or fork

Method
 

  1. In your microwave-safe mug, combine the flour, cocoa powder, baking powder, and salt. Whisk these dry ingredients together until they are fully mixed.
  2. Add the maple syrup, milk, melted oil, vanilla extract, and egg white (or applesauce) to the mug. Mix everything well with a fork or small whisk until you have a smooth batter. Do not overmix.
  3. Stir in the optional chocolate chips if you are using them.
  4. Place the mug in the microwave. Cook on high power for 60 to 90 seconds. Cooking time varies based on microwave wattage. Start checking at 60 seconds.
  5. The cake is done when the top looks set but is still slightly moist. Be careful not to overcook, or the cake will become dry.
  6. Let the mug cake cool for a minute or two before eating directly from the mug.

Notes

If you prefer a richer cake, you can substitute the egg white with one small whole egg, but the texture will be denser. For a vegan version, use applesauce instead of the egg white and ensure your milk is plant-based.
