Healthy Chicken Meatloaf

This recipe makes a lean chicken meatloaf. It uses oats instead of breadcrumbs for binding.

Ingredients
  

Meatloaf
  • 1.5 lb ground chicken 93% lean or higher
  • 1/2 cup rolled oats quick cooking or old fashioned
  • 1/4 cup milk any type
  • 1 egg large
  • 1/2 cup onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Glaze
  • 1/4 cup ketchup
  • 1 tbsp brown sugar packed
  • 1 tsp apple cider vinegar

  • Loaf pan (9x5 inch)
  • Mixing bowl

Method
 

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9x5 inch loaf pan.
  2. In a small bowl, combine the oats and milk. Let this mixture sit for 5 minutes to allow the oats to soften.
  3. In a large mixing bowl, combine the softened oat mixture, ground chicken, egg, chopped onion, minced garlic, thyme, salt, and pepper. Mix gently with your hands until just combined. Do not overmix.
  4. Press the meat mixture evenly into the prepared loaf pan.
  5. In a separate small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar for the glaze.
  6. Spread the glaze evenly over the top of the meatloaf.
  7. Bake for 50 minutes, or until the internal temperature reaches 165 degrees F (74 degrees C).
  8. Remove the meatloaf from the oven and let it rest in the pan for 10 minutes before slicing and serving.

Notes

If you prefer a less sweet glaze, reduce the brown sugar to 2 teaspoons.
