Method
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, mash the ripe bananas thoroughly with a fork until mostly smooth.
- Add the rolled oats, vanilla extract, and cinnamon (if using) to the mashed bananas. Mix until everything is just combined.
- Fold in any optional additions like raisins or chocolate chips.
- Drop rounded tablespoons of the mixture onto the prepared baking sheet. Flatten them slightly with the back of the spoon, as these cookies will not spread much.
- Bake for 12 to 15 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
These cookies are soft and cake-like. For a firmer texture, you can bake them for an extra 2-3 minutes. Store leftovers in an airtight container at room temperature for up to 3 days.
