- Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Mix Greek yogurt, eggs, milk, and vanilla extract in another bowl until smooth.
- Combine the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Heat a skillet over medium heat and lightly grease it with butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and edges look set, about 2 to 3 minutes.
- Flip and cook the other side until golden brown, about 1 to 2 minutes more.
