  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup Greek yogurt
  • 2 large eggs
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Method
 

  1. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. Mix Greek yogurt, eggs, milk, and vanilla extract in another bowl until smooth.
  3. Combine the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a skillet over medium heat and lightly grease it with butter or oil.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface and edges look set, about 2 to 3 minutes.
  7. Flip and cook the other side until golden brown, about 1 to 2 minutes more.
  8. Serve warm with your favorite toppings.

Notes

For extra fluffiness, let the batter rest for 5 minutes before cooking. Serve with fresh berries and a drizzle of honey for added flavor.
