- Preheat your roaster oven to 375 degrees Fahrenheit (190 degrees Celsius).
- Pat the chicken thighs dry using paper towels. This helps the skin crisp up.
- In a small bowl, mix the olive oil, salt, pepper, and paprika.
- Rub the oil and spice mixture evenly over the chicken thighs, making sure to cover the skin.
- Place the chicken thighs skin-side up in the roaster oven pan. Do not overcrowd the pan.
- Roast for 30 to 35 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) when checked with a meat thermometer in the thickest part of the thigh.
- Remove the chicken from the oven and let it rest for 5 minutes before serving.
