Method
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
- In a large bowl, combine the chicken pieces and quartered potatoes.
- In a small bowl, whisk together the olive oil, minced garlic, Italian seasoning, salt, and pepper.
- Pour the oil mixture over the chicken and potatoes. Toss everything together until the chicken and potatoes are evenly coated.
- Spread the coated chicken and potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan.
- Bake for 20 minutes.
- Remove the pan from the oven. Sprinkle the grated Parmesan cheese evenly over the chicken and potatoes.
- Return the pan to the oven and bake for another 10 to 15 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C) and the potatoes are tender and lightly browned.
- Garnish with fresh chopped parsley before serving.

Notes
If your chicken pieces are much larger than 1 inch, you may need to adjust the cooking time slightly. For crispier potatoes, you can roast them alone for 10 minutes before adding the chicken and oil mixture.
