- Season the steak cubes with salt and pepper. Set aside.
- Heat the olive oil in a large skillet over medium-high heat. Add the potatoes and cook for 8 to 10 minutes, stirring occasionally, until they begin to brown and soften.
- Push the potatoes to one side of the skillet. Add the seasoned steak cubes to the empty side of the skillet. Cook the steak for 3 to 4 minutes per side until browned on the outside. Do not overcrowd the pan; cook in batches if necessary.
- Reduce the heat to medium-low. Add the butter and minced garlic to the skillet. Stir constantly until the butter melts and the garlic is fragrant, about 1 minute.
- Sprinkle the Italian seasoning over the steak and potatoes. Toss everything together to coat evenly in the garlic butter sauce.
- Remove the skillet from the heat. Garnish with fresh chopped parsley before serving immediately.
