- Preheat the oven and roast the garlic heads drizzled with olive oil until soft.
- In a bowl, mix softened butter, chopped basil, and Italian seasoning to create garlic butter.
- In another bowl, combine cream cheese, sour cream, red pepper flakes, Italian seasoning, garlic powder, and onion powder until smooth.
- Spread the garlic butter on one side of each bread slice.
- On the other side of two bread slices, layer provolone, cheddar, and mozzarella cheese, followed by the cream cheese mixture.
- Top with the other two slices of bread, butter side out.
- Heat a skillet over medium heat and grill the sandwiches until golden brown on both sides and cheese is melted.
- Sprinkle with shredded parmesan and cheddar cheese before serving.
