Fresh Mediterranean Chickpea Salad

  • 15 oz canned chickpeas Rinsed and drained
  • 1 English cucumber Diced
  • 1 pint cherry tomatoes Halved
  • 1/2 cup red onion Finely chopped
  • 1/2 cup fresh parsley Chopped
Dressing Ingredients
  • 1/4 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Equipment

  • Large mixing bowl
  • Small bowl or jar for dressing

Method
 

  1. Combine the chickpeas, cucumber, tomatoes, red onion, and parsley in a large mixing bowl.
  2. In a small bowl or jar, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper until well combined.
  3. Pour the dressing over the salad ingredients.
  4. Toss gently to coat everything evenly.
  5. Serve immediately, or chill for 30 minutes to allow the flavors to blend before serving.

Notes

You can add feta cheese or Kalamata olives for extra flavor if desired. This salad keeps well in the refrigerator for up to three days.
