- Melt butter in a large skillet over medium-low heat. Add sliced onions and cook for 30–40 minutes until caramelized. Stir in garlic and thyme during the last 5 minutes.
- Preheat the oven to 375°F. Thinly slice potatoes evenly, preferably with a mandoline.
- In a greased baking dish, layer potatoes, caramelized onions, and shredded cheese. Repeat until all ingredients are used. Pour beef broth over the top.
- Cover with foil and bake for 35 minutes. Uncover and bake an additional 20–25 minutes until the top is golden and bubbly.
- Let the dish rest for 10 minutes before serving. Garnish with fresh thyme or chives if you want.
