- Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, mash the ripe bananas until mostly smooth. You can leave a few small lumps for texture.
- Stir the melted butter, beaten egg, and vanilla extract into the mashed bananas until combined.
- In a separate medium bowl, whisk together the sugar, baking soda, salt, and flour.
- Add the dry ingredients to the wet ingredients. Mix gently with a spatula until just combined. Do not overmix; a few streaks of flour are acceptable.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely before slicing.

Notes
For a richer flavor, use brown sugar instead of white sugar. If your bananas are not very ripe (not spotty or black), you can bake them on a baking sheet at 300°F for 15 minutes to speed up the ripening process before mashing.
