Fast Salsa Chicken for Tacos and Bowls

Ingredients
  

Chicken and Seasoning
  • 2.5 lb boneless, skinless chicken breasts
  • 1 packet taco seasoning mix
  • 1 jar salsa (16 oz) Your favorite brand works best.
For Serving
  • 1 package corn tortillas Warm before serving.
  • 1/2 cup fresh cilantro Chopped for garnish.

Method
 

  1. Add chicken, taco seasoning, and salsa to the slow cooker.
  2. Coat the chicken well with the seasoning and salsa.
  3. Set your slow cooker to cook on high for 3 hours or on low for 5 hours.
  4. When cooking finishes, shred the chicken directly in the slow cooker using two forks.
  5. Let the shredded chicken simmer in the juices for an additional 10 to 15 minutes.
  6. Sprinkle freshly chopped cilantro on top of the shredded chicken.
  7. Serve the shredded chicken in warm corn tortillas. Add toppings like diced onions, avocado slices, cheese, sour cream, or extra salsa.

Notes

This chicken is versatile. You can use it for tacos, serve it over rice in a bowl, or add it to salads for a quick meal.
