Fall Pumpkin French Toast

This recipe makes a simple pumpkin French toast suitable for breakfast.

Ingredients
  

For the French Toast
  • 8 slices Thick bread (like challah or brioche)
  • 2 large Eggs
  • 1/2 cup Milk
  • 1/2 cup Pumpkin puree (not pie filling)
  • 1 tsp Pumpkin pie spice
  • 1 tsp Vanilla extract
  • 2 Tbsp Brown sugar
  • 2 Tbsp Butter or oil For cooking

Method
 

  1. In a shallow dish, whisk together the eggs, milk, pumpkin puree, pumpkin pie spice, vanilla extract, and brown sugar until well combined.
  2. Heat a large skillet or griddle over medium heat. Add butter or oil.
  3. Dip each slice of bread into the pumpkin mixture, coating both sides. Let the bread soak for about 15 to 20 seconds per side.
  4. Place the soaked bread onto the hot skillet. Cook for 3 to 4 minutes per side, until golden brown and cooked through.
  5. Serve immediately with your preferred toppings, such as maple syrup or powdered sugar.

Notes

Use day-old bread for the best texture. If you do not have pumpkin pie spice, you can substitute with 1/2 tsp cinnamon, 1/4 tsp ginger, and a pinch of nutmeg and cloves.
