- In a shallow dish, whisk together the eggs, milk, pumpkin puree, pumpkin pie spice, vanilla extract, and brown sugar until well combined.
- Heat a large skillet or griddle over medium heat. Add butter or oil.
- Dip each slice of bread into the pumpkin mixture, coating both sides. Let the bread soak for about 15 to 20 seconds per side.
- Place the soaked bread onto the hot skillet. Cook for 3 to 4 minutes per side, until golden brown and cooked through.
- Serve immediately with your preferred toppings, such as maple syrup or powdered sugar.
Notes
Use day-old bread for the best texture. If you do not have pumpkin pie spice, you can substitute with 1/2 tsp cinnamon, 1/4 tsp ginger, and a pinch of nutmeg and cloves.
