Extra Crispy Chicken Thighs in the Oven

This recipe provides instructions for making chicken thighs with very crispy skin using an oven method.

Ingredients
  

For the Chicken
  • 4 bone-in, skin-on chicken thighs about 1.5 to 2 pounds total
  • 1 tsp baking powder do not use baking soda
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

  • Baking sheet
  • Wire rack

Method
 

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a baking sheet with foil for easier cleanup, then place a wire rack on top of the baking sheet.
  2. Pat the chicken thighs very dry using paper towels. This step is important for crispy skin.
  3. In a small bowl, mix together the baking powder, kosher salt, black pepper, and garlic powder.
  4. Sprinkle the seasoning mixture evenly over all sides of the chicken thighs, rubbing it into the skin.
  5. Place the seasoned chicken thighs skin-side up on the wire rack.
  6. Bake for 35 to 40 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the skin is deeply golden brown and crisp.
  7. Remove the chicken from the oven and let it rest on the rack for 5 minutes before serving.

Notes

Baking powder helps draw moisture out of the skin, leading to a crispier result. Do not skip drying the chicken thoroughly.
