Ingredients
  

For the Cake
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup buttermilk
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
For the Glaze (Optional)
  • 1 cup powdered sugar
  • 2-3 tablespoons milk or water
  • 0.5 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. In a separate medium bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for about 10 minutes before inverting it onto a wire rack to cool completely.
  8. If making the glaze, whisk together the powdered sugar, 2 tablespoons of milk or water, and vanilla extract until smooth. Add more liquid if needed to reach desired consistency. Drizzle over the cooled cake.

Notes

This cake is delicious on its own or with a simple glaze. You can also add chocolate chips or sprinkles to the batter for extra flavor and fun.
