Easy Prime Rib for Busy Hosts

Ingredients
  

For the Prime Rib
  • 1 rib roast (about 4-5 lbs) Prime Rib bone-in or boneless
  • 2 tbsp Olive oil
  • 1 tbsp Garlic powder
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Dried rosemary

Method
 

  1. Preheat your oven to 450°F (230°C).
  2. Pat the prime rib dry with paper towels. Rub the entire roast with olive oil.
  3. In a small bowl, combine garlic powder, salt, black pepper, and rosemary. Sprinkle this mixture evenly over the prime rib.
  4. Place the prime rib, fat side up, in a roasting pan.
  5. Roast at 450°F (230°C) for 15 minutes.
  6. Reduce the oven temperature to 325°F (160°C). Continue roasting for about 15-20 minutes per pound, or until a meat thermometer inserted into the thickest part registers your desired temperature (120-125°F for rare, 130-135°F for medium-rare).
  7. Remove the prime rib from the oven and let it rest, tented loosely with foil, for at least 30 minutes before carving.

Notes

For a more intense garlic flavor, you can stud the roast with whole garlic cloves before applying the seasoning mixture. Carve against the grain for the most tender slices.
