- Preheat your oven to 450°F (230°C).
- Pat the prime rib dry with paper towels. Rub the entire roast with olive oil.
- In a small bowl, combine garlic powder, salt, black pepper, and rosemary. Sprinkle this mixture evenly over the prime rib.
- Place the prime rib, fat side up, in a roasting pan.
- Roast at 450°F (230°C) for 15 minutes.
- Reduce the oven temperature to 325°F (160°C). Continue roasting for about 15-20 minutes per pound, or until a meat thermometer inserted into the thickest part registers your desired temperature (120-125°F for rare, 130-135°F for medium-rare).
- Remove the prime rib from the oven and let it rest, tented loosely with foil, for at least 30 minutes before carving.
Notes
For a more intense garlic flavor, you can stud the roast with whole garlic cloves before applying the seasoning mixture. Carve against the grain for the most tender slices.
