- Remove the salmon fillets from the refrigerator and let them sit out to reach room temperature while you prepare the glaze and preheat the oven. This helps the fish cook evenly.
- Preheat your oven to 400° F (204° C). Line a 9×13-inch baking dish with parchment paper or foil to prevent sticking and simplify cleanup.
- In a small bowl, whisk together the low sodium soy sauce, olive oil, honey, Dijon mustard, and minced garlic until the mixture is combined.
- Place the salmon fillets skin side down in the prepared baking dish. Pour and brush half of the glaze evenly over the salmon fillets, reserving the remaining half for later.
- Place the baking dish in the oven and bake for 12 minutes.

Continue baking the salmon until it reaches an internal temperature of 145°F or flakes easily with a fork. Brush with the remaining glaze during the last few minutes of cooking if you desire a thicker coating.
