- Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, combine the mashed bananas, melted butter, beaten egg, and vanilla extract. Mix until just combined.
- In a separate medium bowl, whisk together the sugar, flour, baking soda, and salt.
- Add the dry ingredients to the wet ingredients. Mix with a spatula until the flour streaks disappear. Do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
For extra flavor, you can add 1/2 cup of chopped walnuts or chocolate chips to the batter before baking.
