Crunchy Homemade Granola

This recipe makes a simple, crunchy granola using rolled oats, nuts, and seeds. It is baked until golden brown.

Ingredients
  

Dry Ingredients
  • 4 cups Rolled oats Old-fashioned, not instant
  • 1 cup Mixed nuts Roughly chopped, such as almonds or pecans
  • 1/2 cup Pumpkin seeds
  • 1/2 cup Sunflower seeds
  • 1 tsp Ground cinnamon
  • 1/2 tsp Salt
Wet Ingredients
  • 1/2 cup Maple syrup
  • 1/3 cup Coconut oil Melted
  • 1 tsp Vanilla extract

  • Large mixing bowl
  • Baking sheet

Method
 

  1. Preheat your oven to 300 degrees F (150 degrees C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, mixed nuts, pumpkin seeds, sunflower seeds, cinnamon, and salt.
  3. In a separate small bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract.
  4. Pour the wet mixture over the dry ingredients. Stir well until everything is evenly coated.
  5. Spread the granola mixture in a single, even layer onto the prepared baking sheet.
  6. Bake for 30 minutes, stirring halfway through to prevent burning and promote even browning.
  7. Remove from the oven. Let the granola cool completely on the baking sheet without stirring. It will become crunchy as it cools.
  8. Once cool, break the granola into clusters if desired. Store in an airtight container.

Notes

If you prefer larger clusters, press the mixture down firmly before baking and avoid stirring until completely cool.
