Ingredients
  

  • 4 medium-sized russet potatoes
For the Garlic Herb Butter
  • 1/4 cup unsalted butter, melted
  • 3 cloves garlic, minced
  • 2 teaspoons fresh thyme leaves, chopped
  • 2 teaspoons fresh rosemary, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup grated Parmesan cheese optional
  • fresh parsley for garnish

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the potatoes. Slice them thinly, about 1/8 inch thick, using a mandoline or a sharp knife.
  3. In a mixing bowl, combine the melted butter, minced garlic, thyme, rosemary, salt, and black pepper.
  4. Grease a muffin tin lightly with butter. Stack potato slices into each cup, overlapping them slightly. Drizzle the garlic herb butter over each stack and sprinkle with Parmesan cheese if you are using it.
  5. Bake for about 25 to 30 minutes until the potatoes are golden brown and fork-tender.

Notes

These potato stacks look impressive but require simple steps. You can substitute other herbs like sage or oregano for variations in flavor.
