Method
- Preheat your oven to 400°F (200°C).
- Place the cherry tomatoes in the bottom of a baking dish. Drizzle with half of the olive oil, salt, pepper, and red pepper flakes. Toss to coat.
- Place the block of feta cheese in the center of the tomatoes. Drizzle the remaining olive oil over the feta. Sprinkle the minced garlic and oregano over the top of the feta and tomatoes.
- Bake for 30 to 35 minutes, or until the tomatoes have burst and the feta is soft and slightly browned.
- While the cheese bakes, cook the pasta in a large pot according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining the pasta.
- Remove the baking dish from the oven. Use a fork to mash the baked feta and tomatoes together, mixing them into a creamy sauce.
- Add the drained pasta to the baking dish with the sauce. Stir well to coat everything. If the sauce seems too thick, add the reserved pasta water, a few tablespoons at a time, until you reach your desired consistency.
- Serve immediately.
