Creamed Spinach (Steakhouse Style)

This recipe makes a rich and creamy spinach dish, similar to what you would find at a steakhouse.

Ingredients
  

For the Spinach
  • 1 lb Fresh spinach washed
For the Cream Sauce
  • 2 tablespoons Butter
  • 1 small Onion finely chopped
  • 2 cloves Garlic minced
  • 1/4 cup All-purpose flour
  • 1.5 cups Whole milk
  • 1/2 cup Heavy cream
  • 1/4 teaspoon Nutmeg freshly grated
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black pepper freshly ground

  • Colander

Method
 

  1. Blanch the spinach in boiling water for 1 minute. Drain, rinse with cold water, and squeeze out as much liquid as possible. Roughly chop the spinach.
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Sprinkle the flour over the onion and garlic mixture. Stir and cook for 1 minute.
  5. Gradually whisk in the milk and heavy cream until smooth. Bring to a simmer, stirring constantly, until the sauce thickens.
  6. Stir in the chopped spinach, nutmeg, salt, and pepper. Cook for 2-3 minutes, stirring, until the spinach is heated through and the sauce is creamy.
  7. Taste and adjust seasoning if needed. Serve hot.

Notes

For a richer flavor, you can add a tablespoon of cream cheese or a pinch of cayenne pepper to the sauce.
