Method
- Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin.
- On a lightly floured surface, unfold the puff pastry sheet. If it's very thick, you can roll it slightly thinner. Cut out 24 circles using a small cookie cutter (about 2-3 inches in diameter).
- Gently press each puff pastry circle into a cup of the mini muffin tin, forming a small cup.
- Place a cube of brie cheese into each pastry cup.
- Top the brie with about 1/2 teaspoon of cranberry sauce.
- Brush the edges of the puff pastry with the beaten egg wash.
- Bake for 10-12 minutes, or until the puff pastry is golden brown and puffed.
- Let the bites cool in the muffin tin for a few minutes before carefully removing them. Garnish with fresh rosemary, if desired.
Notes
You can make these ahead of time and reheat them gently before serving. If you don't have a mini muffin tin, you can bake them on a baking sheet, but they may not hold their shape as well.
