Cranberry Brie Bites

These cranberry brie bites are a simple and delicious appetizer perfect for holidays or parties. They combine the creamy texture of brie with the tartness of cranberry sauce, all wrapped in a flaky pastry.

Ingredients
  

For the Bites
  • 1 sheet Puff pastry Thawed
  • 4 oz Brie cheese Cut into small cubes, rind removed
  • 1/4 cup Cranberry sauce Whole berry or jellied
Optional Garnish
  • 1 tablespoon Fresh rosemary Chopped

Equipment

  • Mini muffin tin
  • Small cookie cutter

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin.
  2. On a lightly floured surface, unfold the puff pastry sheet. If it's very thick, you can roll it slightly thinner. Cut out 24 circles using a small cookie cutter (about 2-3 inches in diameter).
  3. Gently press each puff pastry circle into a cup of the mini muffin tin, forming a small cup.
  4. Place a cube of brie cheese into each pastry cup.
  5. Top the brie with about 1/2 teaspoon of cranberry sauce.
  6. Brush the edges of the puff pastry with the beaten egg wash.
  7. Bake for 10-12 minutes, or until the puff pastry is golden brown and puffed.
  8. Let the bites cool in the muffin tin for a few minutes before carefully removing them. Garnish with fresh rosemary, if desired.

Notes

You can make these ahead of time and reheat them gently before serving. If you don't have a mini muffin tin, you can bake them on a baking sheet, but they may not hold their shape as well.
