- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, separate the egg whites from the yolks. Place the egg whites in one bowl and the yolks in another.
- Add the cottage cheese, salt, garlic powder, and Italian seasoning to the bowl with the egg yolks. Mix well until fully combined.
- In the bowl with the egg whites, add the cream of tartar. Using an electric mixer or whisk, beat the egg whites until stiff peaks form, about 3-5 minutes.
- Gently fold the cottage cheese mixture into the whipped egg whites, being careful not to deflate the egg whites.
- Spoon the batter onto the prepared baking sheet, forming small rounds (about 2-3 inches in diameter).
- Bake in the preheated oven for 25 minutes, or until the tops are golden and the bread is set.
- Remove from the oven and let cool slightly before serving.
