Cottage Cheese Cloud Bread

This recipe makes light and fluffy cloud bread using cottage cheese. It's a great low-carb and gluten-free option for breakfast or a snack.

Ingredients
  

  • 1 cup cottage cheese Approximately 240 grams
  • 4 large eggs
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 teaspoon garlic powder Optional
  • 1 teaspoon Italian seasoning Optional

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, separate the egg whites from the yolks. Place the egg whites in one bowl and the yolks in another.
  3. Add the cottage cheese, salt, garlic powder, and Italian seasoning to the bowl with the egg yolks. Mix well until fully combined.
  4. In the bowl with the egg whites, add the cream of tartar. Using an electric mixer or whisk, beat the egg whites until stiff peaks form, about 3-5 minutes.
  5. Gently fold the cottage cheese mixture into the whipped egg whites, being careful not to deflate the egg whites.
  6. Spoon the batter onto the prepared baking sheet, forming small rounds (about 2-3 inches in diameter).
  7. Bake in the preheated oven for 25 minutes, or until the tops are golden and the bread is set.
  8. Remove from the oven and let cool slightly before serving.
