Copycat McGriddle Bites

Make these small, sweet and savory breakfast bites at home. They mimic the flavor of a McGriddle sandwich without the complex assembly.

Ingredients
  

For the Pancake Batter
  • 1 cup All-purpose flour
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 1 large Egg
  • 3/4 cup Milk
  • 2 tbsp Maple syrup Plus extra for serving
For the Filling and Assembly
  • 1/2 cup Finely chopped cooked sausage or bacon Pre-cooked
  • 1/4 cup Shredded cheddar cheese
  • 2 tbsp Maple syrup For mixing into batter

Equipment

  • Mixing bowl
  • Skillet or griddle
  • Small cookie scoop or spoon

Method
 

  1. Mix the flour, baking powder, and salt in a mixing bowl.
  2. In a separate bowl, whisk the egg, milk, and 2 tablespoons of maple syrup.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine.
  4. Gently fold in the chopped sausage or bacon and the shredded cheddar cheese into the batter.
  5. Heat a skillet or griddle over medium heat. Lightly grease the surface.
  6. Drop rounded tablespoons of batter onto the hot surface to form small pancakes, about 1.5 inches wide.
  7. Cook for 2 to 3 minutes per side, until golden brown and cooked through. The cheese and meat will be melted inside.
  8. Remove from the skillet. Serve the McGriddle bites warm with extra maple syrup for dipping.

Notes

For a stronger maple flavor in the pancake, you can substitute 1 tablespoon of the milk with 1 tablespoon of maple syrup in the main batter mix.
