Method
- Mix the flour, baking powder, and salt in a mixing bowl.
- In a separate bowl, whisk the egg, milk, and 2 tablespoons of maple syrup.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine.
- Gently fold in the chopped sausage or bacon and the shredded cheddar cheese into the batter.
- Heat a skillet or griddle over medium heat. Lightly grease the surface.
- Drop rounded tablespoons of batter onto the hot surface to form small pancakes, about 1.5 inches wide.
- Cook for 2 to 3 minutes per side, until golden brown and cooked through. The cheese and meat will be melted inside.
- Remove from the skillet. Serve the McGriddle bites warm with extra maple syrup for dipping.
Notes
For a stronger maple flavor in the pancake, you can substitute 1 tablespoon of the milk with 1 tablespoon of maple syrup in the main batter mix.
