Cinnamon Apple Cottage Cheese Bites

Ingredients
  

  • 1 cup Cottage cheese
  • 1 cup Rolled oats
  • 1/2 cup Applesauce or 1 small grated apple
  • 1 large Egg
  • 1/2 tsp Cinnamon
  • 1 tbsp Honey or maple syrup optional
  • 1/2 tsp Baking powder
  • 1 Pinch Salt

  • Mixing bowl

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a mixing bowl, combine cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup (if desired), baking powder, and salt. Mix until well combined.
  3. Let the batter rest for 5 minutes.
  4. Fill the mini muffin pan with the mixture nearly to the top.
  5. Bake for 18–20 minutes or until lightly golden and set.
  6. Cool in the pan briefly before transferring to a wire rack.
