Chocolate Avocado Mousse

Ingredients
  

Mousse
  • 2 ripe avocados pitted and scooped
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup maple syrup or preferred liquid sweetener
  • 1/4 cup unsweetened almond milk add more if needed for blending
  • 1 tsp vanilla extract
  • 1/4 tsp salt
Optional Toppings
  • 2 tbsp shaved dark chocolate
  • 4 fresh raspberries per serving

  • Spatula

Method
 

  1. Place the avocado flesh, cocoa powder, maple syrup, almond milk, vanilla extract, and salt into a food processor or high-speed blender.
  2. Process the ingredients until the mixture is completely smooth and creamy. Stop and scrape down the sides with a spatula as needed to ensure everything is incorporated.
  3. If the mousse is too thick, add almond milk one tablespoon at a time until you reach your desired consistency.
  4. Divide the mousse evenly into four small serving dishes or ramekins.
  5. Chill the mousse in the refrigerator for at least 30 minutes to allow it to firm up slightly before serving.
  6. Top each serving with shaved dark chocolate and fresh raspberries before you serve it.

Notes

If you prefer a richer chocolate flavor, increase the cocoa powder to 2/3 cup. Taste the mixture before chilling and adjust the sweetener if necessary.
