Method
- Place the avocado flesh, cocoa powder, maple syrup, almond milk, vanilla extract, and salt into a food processor or high-speed blender.
- Process the ingredients until the mixture is completely smooth and creamy. Stop and scrape down the sides with a spatula as needed to ensure everything is incorporated.
- If the mousse is too thick, add almond milk one tablespoon at a time until you reach your desired consistency.
- Divide the mousse evenly into four small serving dishes or ramekins.
- Chill the mousse in the refrigerator for at least 30 minutes to allow it to firm up slightly before serving.
- Top each serving with shaved dark chocolate and fresh raspberries before you serve it.
Notes
If you prefer a richer chocolate flavor, increase the cocoa powder to 2/3 cup. Taste the mixture before chilling and adjust the sweetener if necessary.
