Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 1 cup low-sodium chicken broth
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 1 cup mushrooms (optional), sliced

Equipment

  • Large skillet
  • Tongs

Method

  1. Pat the chicken breasts dry and season both sides with salt and pepper.
  2. In a large skillet over medium-high heat, heat olive oil until shimmering. Add chicken breasts and sear for 6 to 7 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about one minute until fragrant. Pour in white wine to deglaze the pan.
  4. Stir in chicken broth and let simmer for 5 minutes until slightly thickened. Gradually whisk in butter until creamy.
  5. Return the chicken to the skillet, sprinkle with chopped parsley, ensuring each piece is coated in the sauce.
  6. Serve hot over pasta or rice if you choose.

Notes

This recipe uses simple ingredients to create a dish that tastes like it came from a restaurant. If you skip the optional mushrooms, the sauce will be slightly thinner.
