  • 2 pounds Russet potatoes peeled and cubed
  • 4 tablespoons Unsalted butter
  • 1 cup Whole milk warmed
  • 1 1/2 cups Cheddar cheese shredded
  • 1 1/2 teaspoons Salt
  • 1/2 teaspoon Black pepper
  • 2 tablespoons Fresh chives chopped

Method
 

  1. Place the peeled and cubed potatoes in a large pot and cover with cold salted water.
  2. Bring the water to a boil, then simmer until the potatoes are fork tender.
  3. Drain the potatoes and return them to the pot.
  4. Add butter and warm milk, then mash until smooth and fluffy.
  5. Stir in shredded cheddar cheese, salt, and black pepper until melted and creamy.
  6. Transfer the mixture to a baking dish, sprinkle extra cheese if you want, and bake at 375°F for 10 minutes until bubbly.
  7. Garnish with fresh chives and serve warm.
