Ingredients
  

For the Casserole
  • 1 package frozen hash brown potatoes, thawed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 4 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine the thawed hash browns, cheddar cheese, Monterey Jack cheese, chopped onion, and green bell pepper. Mix well.
  3. In a separate bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  4. Pour the egg mixture over the hash brown mixture and stir gently to combine everything evenly.
  5. Pour the mixture into the prepared baking dish and spread it out evenly.
  6. Bake for 45 minutes, or until the casserole is set and golden brown on top.
  7. Let it cool slightly before serving.

Notes

You can add cooked bacon, sausage, or ham to the casserole for extra flavor. For a spicier dish, add a pinch of cayenne pepper.
