  • 1 lb Ground beef 80/20 recommended
  • 1 medium Onion chopped
  • 10.5 oz Cream of mushroom soup 1 can
  • 10.5 oz Cream of celery soup 1 can
  • 1 cup Milk
  • 1 cup Uncooked white rice Long grain
  • 2 cups Water
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 cups Shredded cheddar cheese Divided
Optional Topping
  • 1/2 cup Crushed butter crackers e.g., Ritz

  • 9x13 inch baking dish

Method
 

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  2. Cook the ground beef and chopped onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir in the cream of mushroom soup, cream of celery soup, milk, uncooked rice, water, salt, and pepper into the skillet with the meat mixture. Mix well to combine.
  4. Pour the entire mixture into the prepared baking dish.
  5. Cover the baking dish tightly with aluminum foil.
  6. Bake for 30 minutes. Remove the foil and sprinkle 1 cup of the shredded cheddar cheese over the top.
  7. Return the casserole to the oven, uncovered, for another 5 minutes, or until the cheese is melted and bubbly.
  8. If using the topping, mix the remaining 1 cup of cheese with the crushed crackers. Sprinkle this mixture over the casserole and bake for 5 more minutes until the topping is golden brown.
  9. Let the casserole stand for 5 minutes before serving.

Notes

You can substitute other condensed soups, like cream of chicken, for variety. If you prefer a richer flavor, use 1 cup of cooked rice instead of uncooked rice and reduce the added water to 1 cup. Adjust baking time if you use cooked rice.
