Ingredients
  

Casserole Base
  • 1 lb Ground beef 80/20 recommended
  • 1 medium Onion, chopped
  • 1 can (10.5 oz) Cream of mushroom soup
  • 1 can (10.5 oz) Cream of chicken soup
  • 1 cup Milk
  • 1 cup Cooked white rice Use leftover or quick-cooking rice
  • 1 cup Frozen peas and carrots mix
  • 1 cup Shredded cheddar cheese Divided
  • 1 tsp Salt
  • 1/2 tsp Black pepper

  • 9x13 inch baking dish

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a 9x13 inch baking dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
  3. Stir the cream of mushroom soup, cream of chicken soup, milk, cooked rice, frozen vegetables, salt, and pepper into the skillet with the meat mixture.
  4. Mix in half of the shredded cheddar cheese.
  5. Pour the mixture evenly into the prepared baking dish.
  6. Top the casserole with the remaining half of the shredded cheddar cheese.
  7. Bake for 30 minutes, or until the casserole is bubbly and the cheese is melted and lightly browned.

Notes

If you do not have quick-cooking rice, you can cook 1 cup of dry rice according to package directions and add it to the mixture. For a dorm setting, you can often substitute the oven baking step with microwaving in 5-minute intervals until heated through, though the cheese topping may not brown.
