- Preheat your oven to 400°F (200°C).
- Mix Cajun seasoning with salt and pepper in a bowl. Coat each chicken breast with the blend.
- Whisk eggs in another bowl. Dip each chicken breast in the egg mixture, then in panko breadcrumbs.
- Place breaded chicken on a parchment-lined baking sheet. Bake for 20-25 minutes until golden brown.
- Combine mayonnaise, minced garlic, lemon juice, salt, and pepper in a bowl for the aioli.
- Assemble sandwiches with lettuce and tomato on each bun half, then add the crispy chicken and drizzle with aioli.
