Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts pounded to even thickness
  • 2 tbsp Cajun seasoning adjust to spice preference
  • 2 large eggs
  • 1 cup panko breadcrumbs can substitute with regular breadcrumbs
For the Aioli
  • 4 cloves garlic minced; roast for milder flavor
  • 1 cup mayonnaise
  • 2 tbsp lemon juice can use lime juice
For the Assembly
  • 4 pieces brioche or ciabatta buns toasty for better flavor
  • 1 head leafy lettuce or arugula for a peppery kick
  • 1 cup sliced tomatoes

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Mix Cajun seasoning with salt and pepper in a bowl. Coat each chicken breast with the blend.
  3. Whisk eggs in another bowl. Dip each chicken breast in the egg mixture, then in panko breadcrumbs.
  4. Place breaded chicken on a parchment-lined baking sheet. Bake for 20-25 minutes until golden brown.
  5. Combine mayonnaise, minced garlic, lemon juice, salt, and pepper in a bowl for the aioli.
  6. Assemble sandwiches with lettuce and tomato on each bun half, then add the crispy chicken and drizzle with aioli.
