  • 2 cups cooked brown rice

Method
 

  1. Prepare brown rice according to package instructions. This takes about 30 minutes.
  2. Cook lean ground beef in a skillet over medium heat. Season with salt and pepper. Cook for about 8 minutes until browned, then drain excess fat.
  3. While the beef cooks, chop the cherry tomatoes, shred the lettuce, and slice the pickles.
  4. Assemble each bowl: layer the cooked brown rice, ground beef, lettuce, tomatoes, pickles, and cheese.
  5. Mix the ketchup and mustard in a small bowl, then drizzle the mixture over the assembled ingredients in each bowl.
  6. Serve the bowls right away.
