For the Pizza Base
  • 1 pre-made pizza crust (or large tortilla) Pizza crust About 10-12 inches
  • 1/2 cup Pizza sauce or marinara Use sparingly
For the Toppings
  • 1 cup Shredded mozzarella cheese
  • 4 Eggs One per quarter section
  • 1/4 cup Cooked breakfast sausage or crumbled bacon Optional
  • 1 tablespoon Chopped green onions For garnish

Method
 

  1. Preheat your oven or toaster oven to 400°F (200°C). Place the pizza crust on a baking sheet.
  2. Spread the pizza sauce evenly over the crust, leaving a small border for the edge.
  3. Sprinkle the mozzarella cheese over the sauce.
  4. If using meat, distribute the cooked sausage or bacon over the cheese.
  5. Make four small wells or indentations in the cheese layer, spaced apart. Carefully crack one egg into each well.
  6. Bake for 12 to 15 minutes, or until the crust is golden brown and the egg whites are set. The yolks should still be slightly runny if you prefer them that way.
  7. Remove from the oven. Sprinkle with chopped green onions before slicing into four servings.

Notes

If you do not have access to an oven, you can cook the eggs separately in a pan and place them on top of a pre-toasted crust with melted cheese. For a vegetarian option, substitute the meat with sautéed mushrooms or bell peppers.
