Ingredients
  

  • 1 8-inch flour tortilla
  • 2 slices cooked and chopped bacon
  • 2 large eggs
  • 1/3 cup shredded cheddar cheese
  • to taste Salt and pepper
  • 1 teaspoon butter optional

Method
 

  1. Whisk together the eggs, salt, and pepper in a small bowl.
  2. In a frying pan over medium-low heat, melt the butter or spray with cooking spray. Pour in the egg mixture and cook until edges set.
  3. Add half the bacon and cheese on top of the eggs. Press an 8-inch tortilla down gently over this layer.
  4. Carefully flip the quesadilla to let the tortilla cook on the bottom side. Add remaining bacon and cheese on top.
  5. Fold the quesadilla in half and cook until golden brown and cheese melts. Cut into wedges with a pizza cutter.
