- Add cottage cheese to a blender or food processor and blend until completely smooth. No curds should remain.
- In a bowl, whisk together the blended cottage cheese, egg, honey (or maple syrup), and vanilla until smooth.
- Stir in flour, baking powder, and salt until just combined. Do not overmix; the batter should be thick but scoopable.
- Gently fold in blueberries. If you use frozen berries, do not thaw them to prevent excess moisture.
- Using a small cookie scoop or spoon, scoop batter and gently roll it into balls. Lightly grease your hands if needed.
- Preheat the air fryer to 350°F (175°C). Lightly spray the basket and place donut holes inside, leaving space between them. Air fry for 8 to 10 minutes, shaking halfway, until golden and cooked through.
- Let the donut holes cool slightly. Dust with powdered sugar, roll in cinnamon sugar, or drizzle with glaze if you want a topping.
