Ingredients
  

For the Donut Holes
  • 1 cup cottage cheese blended smooth
  • 1 large egg
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup blueberries fresh or frozen
  • Cooking spray
Optional Topping
  • powdered sugar, cinnamon sugar, or a light glaze

Method
 

  1. Add cottage cheese to a blender or food processor and blend until completely smooth. No curds should remain.
  2. In a bowl, whisk together the blended cottage cheese, egg, honey (or maple syrup), and vanilla until smooth.
  3. Stir in flour, baking powder, and salt until just combined. Do not overmix; the batter should be thick but scoopable.
  4. Gently fold in blueberries. If you use frozen berries, do not thaw them to prevent excess moisture.
  5. Using a small cookie scoop or spoon, scoop batter and gently roll it into balls. Lightly grease your hands if needed.
  6. Preheat the air fryer to 350°F (175°C). Lightly spray the basket and place donut holes inside, leaving space between them. Air fry for 8 to 10 minutes, shaking halfway, until golden and cooked through.
  7. Let the donut holes cool slightly. Dust with powdered sugar, roll in cinnamon sugar, or drizzle with glaze if you want a topping.
