- Preheat the oven to 350°F. Grease and flour a bread loaf pan (9.25 long x 5.25 wide x 2.75 deep).
- Lightly roast walnuts on a skillet, stirring continuously so they do not burn. Coarsely chop the walnuts and let them cool to room temperature.
- In a mixing bowl, cream together the softened butter and sugar.
- Mash bananas with a fork until they resemble chunky applesauce. Add the mashed bananas and the 2 eggs to the batter, mixing until they are blended.
- In a separate bowl, whisk together the flour, baking soda, and salt. Add this dry mixture to the batter.
- Add the vanilla extract. Mix in the chopped walnuts and raisins. Pour the batter into the prepared loaf pan.
- Bake at 350°F for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the banana bread rest in the pan for 10 minutes before transferring it to a wire rack to cool completely.
