- Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, mash the ripe bananas until mostly smooth. You can leave some small lumps if you prefer texture.
- Whisk the melted butter and sugar into the mashed bananas until combined.
- Beat in the egg and vanilla extract until the mixture is smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Add the dry ingredients to the wet ingredients. Mix gently with a spatula until just combined. Do not overmix the batter.
- Pour the batter into the prepared loaf pan.
- Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely before slicing.
Notes
If you prefer a sweeter bread, you can increase the sugar to 1 cup. For a richer flavor, substitute half of the all-purpose flour with whole wheat flour.
