Ingredients
  

For the Chicken
  • 1.5 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp oil for cooking
For the Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tbsp sriracha adjust to taste
  • 1 tbsp rice vinegar
  • 1 tsp garlic powder
For Serving
  • 4 cups cooked rice
  • 1 cup shredded carrots
  • 1/2 cup sliced green onions for garnish

Method
 

  1. Season the chicken pieces with salt and pepper.
  2. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set aside.
  3. While the chicken cooks, prepare the sauce. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, and garlic powder until smooth.
  4. Return the cooked chicken to the skillet. Pour the Bang Bang sauce over the chicken and toss gently to coat everything evenly. Cook for 1 to 2 minutes until the sauce is heated through.
  5. To assemble the bowls, divide the cooked rice among four bowls. Top the rice with the sauced chicken and shredded carrots.
  6. Garnish with sliced green onions before serving.

Notes

You can substitute chicken thighs for breasts if you prefer. For extra heat, add more sriracha to the sauce mixture.
