Method
- Season the chicken pieces with salt and pepper.
- Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set aside.
- While the chicken cooks, prepare the sauce. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, and garlic powder until smooth.
- Return the cooked chicken to the skillet. Pour the Bang Bang sauce over the chicken and toss gently to coat everything evenly. Cook for 1 to 2 minutes until the sauce is heated through.
- To assemble the bowls, divide the cooked rice among four bowls. Top the rice with the sauced chicken and shredded carrots.
- Garnish with sliced green onions before serving.

You can substitute chicken thighs for breasts if you prefer. For extra heat, add more sriracha to the sauce mixture.
