- Peel and dice the apples into small cubes.
- In a skillet over medium heat, melt the butter. Add apples, brown sugar, and cinnamon. Cook for 6–8 minutes until the apples are soft and coated.
- Stir in the vanilla extract and remove from heat.
- Lay a tortilla flat. Spoon apple mixture on one half. Add cream cheese or yogurt if desired.
- Fold the tortilla over to close and press lightly.
- In a clean skillet, melt a little butter and place the folded tortilla.
- Cook for 2–3 minutes per side until golden brown and crispy.
- Remove, slice, and garnish with powdered sugar or a drizzle of cream. Serve warm.
