Ingredients
  

  • 2 medium apples peeled and diced
  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 flour tortillas
  • 2 tablespoons cream cheese or vanilla yogurt optional
  • 1 teaspoon powdered sugar optional for garnish

Method
 

  1. Peel and dice the apples into small cubes.
  2. In a skillet over medium heat, melt the butter. Add apples, brown sugar, and cinnamon. Cook for 6–8 minutes until the apples are soft and coated.
  3. Stir in the vanilla extract and remove from heat.
  4. Lay a tortilla flat. Spoon apple mixture on one half. Add cream cheese or yogurt if desired.
  5. Fold the tortilla over to close and press lightly.
  6. In a clean skillet, melt a little butter and place the folded tortilla.
  7. Cook for 2–3 minutes per side until golden brown and crispy.
  8. Remove, slice, and garnish with powdered sugar or a drizzle of cream. Serve warm.
