Ingredients

  • 1 lb ground turkey (93% lean works best)
  • 1/2 cup Italian-style breadcrumbs (or plain + 1 tsp Italian seasoning)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 cup onion, finely grated or minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for searing)
  • 2 cups marinara sauce (store-bought or homemade)

Equipment

  • Large bowl
  • Baking dish or oven-safe skillet
  • Skillet

Method

  1. Set oven to 375°F (190°C). Prepare a baking dish or oven-safe skillet.
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan, egg, garlic, onion, parsley, oregano, salt, and pepper. Mix gently until just combined. Do not overwork the mixture.
  3. Roll the mixture into 1 1/2-inch balls, about 16 total. Place them on a plate or tray.
  4. Heat olive oil in a skillet over medium heat. Sear the meatballs for 2–3 minutes per side until golden brown.
  5. Transfer meatballs to a baking dish or keep them in the oven-safe skillet. Pour marinara sauce over the top, cover lightly with foil, and bake for 15–18 minutes, until cooked through (165°F/74°C inside).
  6. Garnish with fresh parsley or extra Parmesan. Serve over spaghetti, zucchini noodles, or enjoy with garlic bread.

Notes

Do not overmix the meat. Gently combine the turkey with breadcrumbs, egg, and seasonings. Overmixing makes the meatballs dense instead of soft and juicy.
