Ingredients
  

For the Protein
  • 1 lb Ground Turkey Substitution: Ground chicken or beef can be used.
For the Salsa Base
  • 1 cup Chunky Tomato Salsa Substitution: Fresh diced tomatoes or homemade salsa can be used.
For the Rice
  • 1 cup Long-Grain White Rice Substitution: Brown rice may require additional cooking time.
For the Veggies
  • 1 cup Corn Kernels Substitution: Frozen or canned corn is acceptable.
For Cooking
  • 2 cups Chicken Broth Substitution: Vegetable broth for a vegetarian version.
For Toppings
  • 1 cup Mexican Cheese Substitution: Cheddar or Monterey Jack can be used.
For Seasoning
  • 1 tsp Salt
  • 2 tbsp Taco Spices Substitution: Use pre-mixed taco seasoning if preferred.

Method
 

  1. Rinse your long-grain white rice under cold water for about 2 minutes. Drain it well and set it aside.
  2. In a large skillet, heat oil over medium heat. Add ground turkey and cook for 5 to 7 minutes, stirring sometimes, until browned.
  3. Stir in chunky tomato salsa, salt, and taco spices. Cook for an additional 2 to 3 minutes.
  4. Add drained rice, corn kernels, and chicken broth to the skillet. Stir well and bring the mixture to a boil.
  5. Reduce heat to low, cover, and let it simmer for 20 to 25 minutes, stirring occasionally.
  6. Remove the skillet from the heat and sprinkle Mexican cheese over the top. Cover and let it sit for 5 minutes.
  7. Taste the meat mixture and adjust seasoning as needed. Serve topped with fresh cilantro or avocado if you want.

Notes

If you substitute brown rice for white rice, you may need to increase the cooking time slightly to get the rice fully tender.
