Ingredients
  

  • 4 boneless pork chops (6-ounce)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 garlic, minced
  • 1/4 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives

Method
 

  1. Pat the pork chops dry with paper towels. Season both sides with salt and pepper.
  2. Heat the olive oil and butter in a large skillet over medium-high heat until the butter is melted and shimmering.
  3. Carefully place the pork chops in the hot skillet. Sear for 3-4 minutes per side, until golden brown and cooked through. Remove pork chops from the skillet and set aside.
  4. Reduce the heat to medium. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant. Do not burn the garlic.
  5. Pour in the chicken broth and lemon juice. Scrape up any browned bits from the bottom of the skillet. Bring the liquid to a simmer.
  6. Stir in the fresh parsley and chives.
  7. Return the pork chops to the skillet and spoon the sauce over them. Cook for an additional 1-2 minutes to heat through.
  8. Serve immediately.

Notes

This recipe is naturally gluten-free. If you are looking for a quick side dish, serve this with steamed green beans or a simple salad.
