Method
- Pat the pork chops dry with paper towels. Season both sides with salt and pepper.
- Heat the olive oil and butter in a large skillet over medium-high heat until the butter is melted and shimmering.
- Carefully place the pork chops in the hot skillet. Sear for 3-4 minutes per side, until golden brown and cooked through. Remove pork chops from the skillet and set aside.
- Reduce the heat to medium. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant. Do not burn the garlic.
- Pour in the chicken broth and lemon juice. Scrape up any browned bits from the bottom of the skillet. Bring the liquid to a simmer.
- Stir in the fresh parsley and chives.
- Return the pork chops to the skillet and spoon the sauce over them. Cook for an additional 1-2 minutes to heat through.
- Serve immediately.
