Ingredients
  

For the Base
  • 1 cup Medjool dates, pitted About 8 large dates
  • 1/2 cup Raw walnuts or almonds
For the Filling
  • 1 cup Frozen raspberries
  • 1 cup Plain Greek yogurt (or coconut yogurt for dairy-free)
  • 2 tbsp Maple syrup or honey Adjust to your sweetness preference

  • Food processor
  • Small bowls or glasses

Method
 

  1. Prepare the base: Place the pitted dates and nuts in a food processor. Pulse until the mixture forms a sticky, crumbly dough.
  2. Divide the base mixture evenly among four small bowls or glasses. Press the mixture down lightly to form the bottom layer.
  3. Prepare the filling: Combine the frozen raspberries, Greek yogurt, and maple syrup in the food processor (no need to clean it after the base). Blend until smooth. If the mixture is too thick, add a teaspoon of water or milk.
  4. Spoon the raspberry yogurt filling over the base layer in each of the four containers.
  5. Chill the dessert cups in the refrigerator for at least 30 minutes before serving. This allows the layers to set.

Notes

If you want a brighter pink color, use slightly less raspberry and add a small splash of beet juice. You can top with a few extra chopped nuts or a fresh raspberry before serving.
